I love these Japanese Soba Noodles With Peanut Sauce because you only need a few ingredients, most of which are probably pantry staples, they are very easy to make, and the flavor is so amazing you’re going to make it over and over. They are also healthy and vegetarian (and can be vegan if you substitute for the honey). You can also serve them hot or cold and add veggies or skip them.

I find it a bit funny that I don’t actually like peanut butter. Like no thank you. I don’t like how it smells. I don’t like how it tastes on it’s own. And I don’t want it. But put some sugar into it, like in this Peanut Butter Ice Cream Cake or these amazing Old Fashioned Peanut Butter Cookies. Or in this case add some spices and garlic, and I’m all over it. Can you explain this to me? I can’t. Anyway this recipe takes about 10 minutes to make and it’s very good and it doesn’t break your bank. You must try it now 😉

Ingredients

Scale
  • 1 package of Japanese Soba noodles

Sauce Ingredients: 

  • 1/2 cup unsalted roasted peanuts, plus 1 tbsp. for garnish
  • 3 tbsp. sesame oil (2 for the sauce + 1 for noodles)
  • 2tbsp. vegetable or canola oil
  • 2 cloves garlic, peeled
  • 1 tsp garlic chili sauce
  • 2 tbsp. soy sauce
  • 4 tsp balsamic vinegar
  • 2 tsp honey

Instructions

  • Blend all of the sauce ingredients until the sauce is smooth. Set Aside.
  •  Make buckwheat noodles, drain and rinse under cold water, add 1 tbsp. sesame oil. Add peanut sauce, mix well and serve. 

Notes

  • For hot noodles skip the rinse under cold water part, drain the noodles and add 1 tbsp. sesame oil and mix with peanut sauce right away. 
  • ** If you looking to add veggies, I recommend: raw thinly sliced carrots, thinly sliced red bell pepper and scallions.
