Old Fashioned Peanut Butter Cinnamon Cookies

A few years ago, I found a handwritten recipe for Old Fashioned Peanut Butter Cookies at my mother-in-law’s house. I found it while I was helping her organize her spice cabinet. I thought it was my husband’s grandmother’s recipe, but it’s not her handwriting so it must have just been a recipe that she used. My husband’s family loves peanut butter (a trait they have passed on to my son) so they all liked the original recipe, but I thought it was too much peanut butter. So I added some cinnamon to cut the peanut butter taste (and substituted butter for margarine and whole wheat flour for white flour). The cinnamon is a great complement to the peanut butter, and the result is a perfect combination of a sugar cookie and a peanut butter cookie. Even my peanut-butter-loving husband and son said they were better with the cinnamon. This is a simple recipe that produces enough cookies to share with friends and family … if you don’t eat them all yourself that is.

Ingredients

Scale
  • 2 1/2 cups organic whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup unsweetened butter, room temperature
  • 1 cup peanut butter, creamy or chunky (I use creamy)
  • 1 cup white sugar
  • 1 cup dark brown sugar, firmly packed
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F
  • Stir flour, baking powder, baking soda, salt, and cinnamon in a medium bowl. Set aside.
  • In a large bowl, use a mixer on medium speed to beat butter and peanut butter until smooth.
  • Add sugar and brown sugar. Beat until well-blended.
  • Add eggs and vanilla. Beat until combined.
  • Add flour mixture to butter mixture, about 1 cup at a time. Mix until all the flour is blended in well.
  • Chill the  dough in the refrigerator for about 1 hour. 
  • Shape the dough into 1-inch balls. Place balls 2 inches apart on an un-greased baking sheet lined with parchment paper and flatten (you can also decorate them with colored sugars if you want).
  • Bake for 9-11 minutes, until lightly browned. Remove from baking sheet to a cooling rack.
