Pumpkin Spice Granola

Summer is my favorite season so I’m pretty sad that it’s coming to an end. This Pumpkin Spice Granola one of the things that makes the transition from summer to fall bearable. Why you ask? Because I love pumpkin spice everything. Of course, most store-bought pumpkin spice treats are about as unhealthy as you can get, and who has the time to continually bake healthier treats at home? Enter my pumpkin spice granola. It’s incredibly simple, takes less than 30 minutes to make, is easily doubled, and can be stored for a couple of months (if kept in an airtight container in a cool, dry place). And if you do want to splurge a little, it can even be added to cookies and other baked goods. Otherwise, enjoy it for breakfast or as a snack, on it’s own or with milk or yogurt.

Pumpkin Spice Granola

Ingredients

Scale
  • 2 cups old fashioned oats
  • 1/2 cup pecans, chopped
  • 1 tsp pumpkin spice
  • pinch of salt
  • 1/4 cup maple syrup
  • 1 cup vanilla yogurt covered raisins (optional)

Instructions

  • Preheat oven to 350°F.
  • Combine oats, pecans, pumpkin spice, and salt, and mix well.
  • Add maple syrup, and mix well again so granola is evenly coated with syrup.
  • Spread granola evenly on a prepared baking sheet (either greased or covered with aluminum foil). Bake for 20-25 minutes, mixing halfway through.
  • Let cool, add vanilla yogurt covered raisins* then store in an airtight container.

Notes

  • Vanilla yogurt covered raisins are totally optional. In fact it’s a recent addition to this recipe just because I saw some raisins on sale. Granola tastes just as great without them. It is up to you!
