Oven Baked Chicken Scampi Tenders

These Oven Baked Chicken Scampi Tenders are a recent addition to my cooking repertoire. And what an addition they are! They are so easy to make and very delicious! Sort of like chicken cutlets, but baked in the oven instead of cooked on the stove top. And the juices these tenders produce are amazing on rice or pasta as a sauce. One thing to keep in mind, as with all my recipes that call for chicken tenders, these cook faster and there’s no fat so if you are not paying attention they could easily dry up. You can also substitute different chicken parts; just adjust cooking time accordingly. Dark meat and pieces with bones in them will take longer to cook.

Ingredients

Scale
  • 3 to 3 1/2 lb chicken tenders
  • 1 1/4 cup italian seasoned breadcrumbs
  • 2/3 cup grated parmesan
  • 1/3 cup minced parsley
  • 1 1/4 tsp garlic powder
  • 1 1/4 tsp paprika
  • 1 tsp salt
  • 1/3 cup olive oil
  • 1 stick butter
  • 3 garlic cloves, crushed

Instructions

  • Preheat oven to 425F.
  • Combine breadcrumbs, parmesan, parsley and spices in a plastic bag, big enough to fit all the chicken.
  • Add chicken and shake until all the chicken is coated.
  • In a 13×9 dish, or a cast iron skillet, big enough to fit all the chicken, place the butter, oil and garlic. Melt the butter in an oven, add chicken to the dish and bake about 20-25 minutes. Until chicken is cooked through*. 
  • Serve with rice or pasta. 

Notes

*keep in mind that chicken tenders are lean and can dry out easily, so it’s good to start checking if they’re ready around 20 minute mark.
