For the dressing:
- 1/3 cup balsamic vinegar
- 2/3 cup olive oil
- 1 tbsp. honey
- 3 garlic cloves
- Salt and pepper to taste
For the Salad:
- 1 lb. chicken tenders
- 1–5oz. pack spring mix salad greens*
- 1–8oz. fresh mozzarella pearls, drained.
- 1/2 English cucumber, chopped
- 2 medium tomatoes, chopped
- 1/2 cup Kalamata olives,
- 1 roasted red bell pepper, chopped
- 1/4 red onion, slices thin
Instructions
For the salad dressing:
- Mix all the ingredients, set aside.
For the chicken:
- Marinate chicken tenders in 1/4 cup of the salad dressing for 10-20 minutes. Grill the chicken until no longer pink in center. Let chicken rest while you prep salad ingredients.
For the salad:
- Prep all the salad ingredients, mix, add sliced or chopped chicken. Mix with the rest of the salad dressing and enjoy!

- Substitute spring salad mix with 2 heads of Romaine lettuce
