3 to 3 1/2 lb chicken tenders
1 1/4 cup italian seasoned breadcrumbs
2/3 cup grated parmesan
1/3 cup minced parsley
1 1/4 tsp garlic powder
1 1/4 tsp paprika
1 tsp salt
1/3 cup olive oil
1 stick butter
3 garlic cloves, crushed
Instructions
Preheat oven to 425F.
Combine breadcrumbs, parmesan, parsley and spices in a plastic bag, big enough to fit all the chicken.
Add chicken and shake until all the chicken is coated.
In a 13×9 dish, or a cast iron skillet, big enough to fit all the chicken, place the butter, oil and garlic. Melt the butter in an oven, add chicken to the dish and bake about 20-25 minutes. Until chicken is cooked through*.
Serve with rice or pasta.
Notes
*keep in mind that chicken tenders are lean and can dry out easily, so it’s good to start checking if they’re ready around 20 minute mark.
