Are you tired of zucchini yet? If not, you must try this Savory Zucchini Cheese Pie. It’s so delicious and just melts in you mouth. Neither my husband nor my son are into zucchini, but I love it because you can do so many things with it (like these Breakfast Zucchini Muffins that I made turn out so good), so I’ve come to the conclusion that it’s the ultimate girl food ;). So the next time you have an all-girl get together be sure to give this recipe a try. You won’t regret it. I also can’t help but associate zucchini with summer because that’s the season for it both here and in Russia. I hope you’ll give this recipe a try.

Ingredients

Scale
  • 3 cups grated zucchini
  • 1 small onion, chopped
  • 3/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 cup grated provolone cheese
  • 1/4 cup grated parmesan cheese, plus 1 tbsp. for sprinkling the top
  • 3 eggs, beaten
  • 1/4 cup olive oil
  • 1/2 tsp dry basil
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 350F
  • Cover 9-inch pie dish with cooking spray.
  • Mix all of the ingredients except for 1 tbsp. of parmesan. 
  • Spoon the pie mixture into the baking dish.
  • Bake 45-50 minutes or until golden brown.
  • Sprinkle with 1 tbsp. of parmesan.
  • Cool fir 10-15 minutes and serve.
