These scones are super easy and super delicious. If you don’t have blueberries, use any other berry or skip those all together.

Ingredients

Scones:
- 3 1/3 cups all-purpose flour
- 1/2 cup of sugar
- 2 tbsp. baking powder
- pinch of salt
- 1 stick margarine*, cold and cut into small cubes
- 1 cup whole milk
- 1/4 cup frozen (fresh) blueberries
Lemon Icing:
- 1 cup confectioner’s sugar
- 2 tbsp. milk
- zest of 1 lemon
Instructions
Scones:
- Preheat the oven to 450F
- Prepare your baking sheet either by covering with foil or parchment paper. If using foil, spray with cooking spray to avoid sticking.
- Mix dry ingredients
- Add margarine to flour mixture, work the margarine into the flour with your hands, add milk and mix until the dough forms.
- Mix in blueberries.
- On a floured surface roll out the dough to about 1/2 inch to 3/4 of an inch thick circle. Cut into 8 slices.
- Place on a prepared baking sheet and bake at 450F for 10-12 minutes, until toothpick comes out clean. Make the icing while scones start to cool down.
Icing:
- Mix icing ingredients and cover the scones evenly. Enjoy!
