One of our relatives brought this recipe back after visiting Ireland. It’s super easy and delicious.

These scones are super easy and super delicious. If you don’t have blueberries, use any other berry or skip those all together.

Ingredients

Scale

Scones:

  • 3 1/3 cups all-purpose flour
  • 1/2 cup of sugar
  •  2 tbsp. baking powder
  • pinch of salt
  • 1 stick margarine*, cold and cut into small cubes
  • 1 cup whole milk
  • 1/4 cup frozen (fresh) blueberries

Lemon Icing:

  •  1 cup confectioner’s sugar
  • 2 tbsp. milk
  • zest of 1 lemon

Instructions

Scones:

 

  • Preheat the oven to 450F
  • Prepare your baking sheet either by covering with foil or parchment paper. If using foil, spray with cooking spray to avoid sticking.
  • Mix dry ingredients
  •  Add margarine to flour mixture, work the margarine into the flour with your hands, add milk and mix until the dough forms.
  •  Mix in blueberries. 
  • On a floured surface roll out the dough to about 1/2 inch to 3/4 of an inch thick circle. Cut into 8 slices.
  • Place on a prepared baking sheet and bake at 450F for 10-12 minutes, until toothpick comes out clean. Make the icing while scones start to cool down.

Icing:

  • Mix icing ingredients and cover the scones evenly. Enjoy!

Notes

  • can substitute with butter
