This Golden granola recipe was inspired by Baklava, popular Middle Eastern dessert. I tried keeping true to the recipe that I have for Baklava, with the exception of sesame seeds, I just wasn’t sure would go well with oatmeal. I have to say this combo does not disappoint. It tastes so good and fresh and summery, and looks like a sunshine in a bowl thanks to the turmeric. I prefer granola to cereal for breakfast (and sometimes even for a light dinner). It has less sugar, more whole grains (oatmeal), plus nuts and warm spices that you get to control. And it’s just so easy to make. And one of the best parts is that after you’re done with the granola, there is that golden milk (I use almond milk) at the bottom of your bowl that you won’t be able to let go to waste.

Cut out sugary cereals and snacks with this power-packed granola

Ingredients

  • 3 cups old fashioned oats 
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped almonds
  • 1/2 cup pistachios* 
  • 4 Tbsp honey
  • 2 Tbsp coconut oil measured solid, then melted
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 1 tsp turmeric
  • 1/8 tsp salt
  •  tiny pinch of black pepper to “activate” turmeric

Instructions

  • Preheat oven to 350 and prepare your baking sheet by lining it with either parchment paper or foil. If using foil I recommend slightly spraying it with cooking spray.
  •  Mix oats, almonds, walnuts and spices and set aside.
  •  Melt coconut oil and mix with honey.
  •  Mix oat mixture with coconut mixture, spread it on baking sheet in an even layer. Bake at 350 for 20 minutes mixing halfway through. Once granola is done, quickly add pistachios and mix it well with granola. Let cool before serving.  

Notes

  • I couldn’t find raw pistachios anywhere so I got roasted unsalted kind and just added it at the end of recipe while granola is still hot so the flavors combine.
