I don’t know about you, but I love granola. Especially this Almond Cherry Granola ;). Not only is it filling and delicious, but it also has great shelf life and a ton of uses so it’s perfect for meal planning. I’ve already shared my Pumpkin Spice Granola, but because I eat it often, I like to experiment with new flavors so that I don’t get to tired of the same recipe. This recipe is packed with almond flavor. It’s great with milk (almond or dairy), smoothies, or yogurt. It’s also a nutritious and healthy option for breakfasts or snacks. Oats, almonds, flaxseed, honey, and coconut oil are all great for you and are known to have health benefits, and even the dried cherries have antioxidants. So even though I usually eat granola for breakfast or as a snack, I’ll sometimes also use it as a meal replacement and eat it for dinner. This recipe will make about 6 cups of granola, and should keep up to 4 weeks in an airtight container.

Ingredients
- 4 cups old fashioned oats
- 1 cup sliced almonds
- 1/2 cup unbleached almond meal
- 1/2 cup ground flaxseed
- 1/2 tsp salt
- 1/2 cup raw honey
- 1/3 cup coconut oil
- 3/4 tsp almond extract
- 1 cup dried cherries, halved
Instructions
- Preheat oven to 325F .
- Line your baking sheet with foil or parchment paper. (If using parchment paper, keep in mind that it will slide around if not secured.)
- Mix oats, almonds, almond meal, flaxseed and salt. In a small sauce pan, melt coconut oil. Remove from heat, and add honey and almond extract. Mix well. Add wet ingredients to dry ingredients, and mix until well incorporated. Spread the granola on the baking sheet, and bake at 325F for 20 minutes, mixing halfway through. Once granola cooled down, add cherries, and mix well.
