Spinach Matcha Smoothie Bowl

Winter has lingered well into April here in New Jersey, but a couple of months ago, before we were hit with a series of 3 nor’easters in the span of a couple weeks, we actually had a little glimpse of 70-degree weather. And it was great. The warm, fresh air was so intoxicating that I didn’t want it to end. It felt like spring, and I don’t know about you, but for me spring means not only the ability to get outside more and exercise and soak up the sun, but also fresh produce.

And thinking about fresh produce started me thinking about recipes for smoothies, smoothie bowls, and nice cream. I love the idea of pouring a smoothie into a bowl and then adding more nutritious goodness on top. I like simple smoothies that convenient to make and yet are as nutritious as possible so I build them around super foods that are easily accessible either in my local grocery store or via Amazon Prime (that way if you run out of something you can get it in a day or two). In this case, I used matcha powder, ground flaxseed, and amla powder.

This smoothie bowl is also practical, at least for me. Summer is coming, and our apartment gets hot! This is a great way to both keep cool and hydrated, and to enjoy a meal without having to produce even more heat with my oven or stove. Top the smoothie with whatever you enjoy. I usually do fruit, granola, and coconut. If you want to enjoy it as a smoothie, then just pour it into a cup and drink it. And if you’d rather have “nice cream,” simply add a touch more frozen mango to make it a bit thicker, and then freeze it.

Ingredients

Scale
  • 1 cup reduced sugar vanilla almond milk
  • 1 cup baby spinach packed
  • 1 cup frozen mango (or frozen banana)
  • 1 Tbsp ground flaxseed
  • 1 tsp matcha powder
  • 1 tsp amla powder
  • Toppings: chia seeds, sliced bananas, blueberries, raspberries, granola, coconut flakes, hemp seeds.

Instructions

  • Place all ingredients (except for the toppings) in a blender, blend until smooth. Enjoy!
