An easy, delicious, and very versatile recipe. Invest 30 minutes of your time, and you wont regret it. 

Ingredients

Scale
  • 15oz. package of Spring mix greens*
  • 19.oz package three cheese tortellini, cooked and cooled.
  • 1/2 cup chopped tomatoes
  • 1/2 cup sliced cucumbers
  • 1/2 cup sliced or cubed salami
  • 1/2 cup fresh mozzarella, halved
  • 1/2 cup sliced roasted red peppers
  • 1/4 to 1/2 cups sliced hot pepperoncini peppers
  • 1/4 cup Kalamata olives, halved
  • 1/4 cup red onion, sliced thinly
  • 1/41/2 cup your favorite bottled Italian dressing

Instructions

  • Mix everything, enjoy!

Notes

*you can substitute Spring Mix with Romaine lettuce if you prefer.

** quantities on chopped veggies and salami can be adjusted from 1/2 cup up to 3/4 cup. This salad is very forgiving.
