I’ve been making this Easy Tortellini Salad for years. As its name indicates, it’s an incredibly easy recipe. It’s also very forgiving because you can use what you have in a fridge. Sometimes I don’t have salami so I skip it. Sometimes I have marinated artichoke hearts so I add them. Sometimes there is no fresh mozzarella so I use parmesan. It’s just that easy. One other thing to confess is that I actually just use store bought Italian salad dressing. There are a few reasons for that. For one, it’s just easier sometimes not to have to make everything from scratch. The other reason is that it’s cheaper than buying each individual ingredient for home made salad dressing. And that’s the reason that this Easy Tortellini Salad stuck with me through the years: it’s easy to make, it’s versatile and it’s so delicious.

Ingredients
- 1 –5oz. package of Spring mix greens*
- 1 – 9.oz package three cheese tortellini, cooked and cooled.
- 1/2 cup chopped tomatoes
- 1/2 cup sliced cucumbers
- 1/2 cup sliced or cubed salami
- 1/2 cup fresh mozzarella, halved
- 1/2 cup sliced roasted red peppers
- 1/4 to 1/2 cups sliced hot pepperoncini peppers
- 1/4 cup Kalamata olives, halved
- 1/4 cup red onion, sliced thinly
- 1/4–1/2 cup your favorite bottled Italian dressing

Notes
*you can substitute Spring Mix with Romaine lettuce if you prefer.
** quantities on chopped veggies and salami can be adjusted from 1/2 cup up to 3/4 cup. This salad is very forgiving.
