This Vegan Broccoli Alfredo is so delicious. And it has all healthy ingredients so there is definitely no guilt after eating it. It’s very easy to make, and my whole family loves it. And it’s also one of those meals that doesn’t cost a lot, which is what I’m looking for a lot of times when I’m making a meal.

Ingredients

- 1 recipe of garlic roasted broccoli
- 1 box of fettuccine
Sauce Ingredients:
- 1 cup soaked cashews
- 2 tbsp. nutritional yeast
- 1 garlic clove
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1 cup filtered water
- 1 tbsp. lemon juice
Instructions
- Cook the broccoli, set aside.
- Soak cashews in hot water for about 5-10 minutes, drain
- Cook fettuccine according to directions on a package
- Blend the sauce ingredients
- Mix everything together, sauce, broccoli and fettuccine and serve immediately*.
Notes
- * Fettuccine begin to absorb the sauce almost right away, the longer you wait the dryer they become.
