These sausage and pepper meatballs are amazing!

For meatballs:
1 package sweet Italian sausage meat
1 small red bell pepper, chopped
1 small Spanish onion, chopped
2 garlic cloves, chopped
1 egg
1/4 tsp oregano
1/4 tsp basil
2 –3 cups fresh breadcrumbs*
olive oil for cooking
For the sauce:
1 red bell pepper, sliced
1 onion, sliced
2 garlic cloves, sliced
1 jar of marinara sauce
1/4 tsp oregano
1/4 tsp basil
salt and pepper to taste
For the meatballs:
Cook pepper and onion with garlic and spices until soft, about 10 minutes
In a food processor, process onion mixture until almost finely chopped. Add the rest of ingredients, process again until everything is mixed well.
Make meatballs, since the sausage is fatty you’ll have to spray your hands with cooking spray or the meatball mixture will stick to your hands.
Brown meatballs on all sides, and place it on a plate.
For the sauce:
In a same skillet add more olive oil, cook onions and peppers with spices about 5 minutes.
Add meatballs back to the skillet along with marinara sauce. Cover and simmer until meatballs are cooked through about 20 minutes.
Serve in a sub with mozzarella or provolone, or with spaghetti.

Start with two cups of breadcrumbs and go from there
