These sausage, peppers, and onion meatballs is my take on the popular and classic Italian-American sausage, peppers, and onions sandwich. The flavors are so amazing you just don’t want it to end. The reason I decided to make meatballs instead of leave it as sausage is because, well I don’t like the sausage here, in America. There is just something about the texture that I don’t like. Russian sausages are more dense. It’s more like a kielbasa. So, not wanting to miss out on this awesome flavor combo of sausages, peppers, and onions, all cooked in marinara sauce, I decided to change it into meatballs. And the result did not disappoint. I’ll be adding these sausage, peppers, and onions meatballs to my dinner rotation. The beauty of this recipe is that you can make it and serve it in subs, with spaghetti, or make baked ziti with these meatballs… Hmm I feel another recipe brewing. Try it; you won’t be disappointed.

Ingredients

For meatballs:

  • 1 package sweet Italian sausage meat
  • 1 small red bell pepper, chopped
  • 1 small Spanish onion, chopped
  • 2 garlic cloves, chopped
  • 1 egg
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 23 cups fresh breadcrumbs*
  • olive oil for cooking

For the sauce:

  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 garlic cloves, sliced
  • 1 jar of marinara sauce
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • salt and pepper to taste

Instructions

For the meatballs:

  •  Cook pepper and onion with garlic and spices until soft, about 10 minutes
  • In a food processor, process onion mixture until almost finely chopped. Add the rest of ingredients, process again until everything is mixed well.
  • Make meatballs, since the sausage is fatty you’ll have to spray your hands with cooking spray or the meatball mixture will stick to your hands. 
  • Brown meatballs on all sides, and place it on a plate.

For the sauce:

  • In a same skillet add more olive oil, cook onions and peppers with spices about 5 minutes. 
  • Add meatballs back to the skillet along with marinara sauce. Cover and simmer until meatballs are cooked through about 20 minutes.
  • Serve in a sub with mozzarella or provolone, or with spaghetti.

Notes

  • Start with two cups of breadcrumbs and go from there
