This salad is incredibly easy to make, it’s very delicious and makes a perfect lunch or dinner.

For the dressing:
1/3 cup balsamic vinegar
2/3 cup olive oil
1 tbsp. honey
3 garlic cloves
Salt and pepper to taste
For the Salad:
1 lb. chicken tenders
1–5oz. pack spring mix salad greens*
1–8oz. fresh mozzarella pearls, drained.
1/2 English cucumber, chopped
2 medium tomatoes, chopped
1/2 cup Kalamata olives,
1 roasted red bell pepper, chopped
1/4 red onion, slices thin
Instructions
For the salad dressing:
Mix all the ingredients, set aside.
For the chicken:
Marinate chicken tenders in 1/4 cup of the salad dressing for 10-20 minutes. Grill the chicken until no longer pink in center. Let chicken rest while you prep salad ingredients.
For the salad:
Prep all the salad ingredients, mix, add sliced or chopped chicken. Mix with the rest of the salad dressing and enjoy!
Notes
Substitute spring salad mix with 2 heads of Romaine lettuce
