Balsamic Grilled Chicken Salad

This salad is incredibly easy to make, it’s very delicious and makes a perfect lunch or dinner. 

Ingredients

For the dressing:

  • 1/3 cup balsamic vinegar
  • 2/3 cup olive oil
  • 1 tbsp. honey
  • 3 garlic cloves
  • Salt and pepper to taste

For the Salad:

  • 1 lb. chicken tenders
  • 15oz. pack spring mix salad greens*
  • 18oz. fresh mozzarella pearls, drained.
  • 1/2 English cucumber, chopped
  • 2 medium tomatoes, chopped
  • 1/2 cup Kalamata olives,
  • 1 roasted red bell pepper, chopped
  • 1/4 red onion, slices thin

Instructions

For the salad dressing:

  • Mix all the ingredients, set aside.

For the chicken:

  • Marinate chicken tenders in 1/4 cup of the salad dressing for 10-20 minutes. Grill the chicken until no longer pink in center.  Let chicken rest while you prep salad ingredients.

For the salad:

  • Prep all the salad ingredients, mix, add sliced or chopped chicken. Mix with the rest of the salad dressing and enjoy!

Notes

  • Substitute spring salad mix with 2 heads of Romaine lettuce
