1 cup peanut butter, creamy or chunky (I use creamy)
1 cup white sugar
1 cup dark brown sugar, firmly packed
2 eggs
1 tsp vanilla extract
Instructions
Preheat oven to 350°F
Stir flour, baking powder, baking soda, salt, and cinnamon in a medium bowl. Set aside.
In a large bowl, use a mixer on medium speed to beat butter and peanut butter until smooth.
Add sugar and brown sugar. Beat until well-blended.
Add eggs and vanilla. Beat until combined.
Add flour mixture to butter mixture, about 1 cup at a time. Mix until all the flour is blended in well.
Chill the dough in the refrigerator for about 1 hour.
Shape the dough into 1-inch balls. Place balls 2 inches apart on an un-greased baking sheet lined with parchment paper and flatten (you can also decorate them with colored sugars if you want).
Bake for 9-11 minutes, until lightly browned. Remove from baking sheet to a cooling rack.
