These Snickerdoodle Snack Bites are so good! I know, I’ve been sharing too many nut recipes. I’ll stop for a little while. Well, maybe not for too long a while, but if you can get a good bargain on raw nuts, have a decent food processor, and enjoy a good snack, experimenting with different recipes like this only makes sense. This is also another healthy snack recipe that was a big hit with my little picky-eater (along with my no-bake brownies). Cut out the long ingredient lists in store-bought snacks and replace them with simple, easy, healthy recipes like this one. You’ll thank me later.

Ingredients

Scale
  • 2 cups raw cashews
  • 1/2 tsp vanilla extract
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • 2 tbsp coconut oil, melted

Instructions

  • Roast cashews at 350F for 9 minutes. Let cool. Melt coconut oil.
  • In a food processor, pulse cashews until finely ground.
  • Add the rest of the ingredients, and process until everything is mixed well.
  • Shape into 3/4″ balls.
  • Refrigerate for 15-20 minutes.
  • Enjoy!
