Enjoy the taste of cookies while replacing the sugar with healthy fats and natural flavors.

Ingredients

  • 2 cups raw cashews
  • 1/2 tsp vanilla extract
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • 2 tbsp coconut oil, melted

Instructions

  • Roast cashews at 350F for 9 minutes. Let cool. Melt coconut oil.
  • In a food processor, pulse cashews until finely ground.
  • Add the rest of the ingredients, and process until everything is mixed well.
  • Shape into 3/4″ balls.
  • Refrigerate for 15-20 minutes.
  • Enjoy!
