Enjoy the taste of cookies while replacing the sugar with healthy fats and natural flavors.
This is my last nut recipe for a while. I promise. 🙂
Well, maybe not for too long a while, but if you can get a good bargain on raw nuts, have a decent food processor, and enjoy a good snack, experimenting with different recipes like this only makes sense. This is also another healthy snack recipe that was a big hit with my little picky-eater (along with my no-bake brownies). Cut out the long ingredient lists in store-bought snacks and replace them with simple, easy, healthy recipes like this one. You’ll thank me later.
Yield: 16-18 bites (depending on size)
- 2 cups raw cashews
- 1/2 tsp vanilla extract
- 3 tbsp maple syrup
- 1 tsp cinnamon
- 2 tbsp coconut oil, melted
Roast cashews at 350F for 9 minutes. Let cool. Melt coconut oil.
In a food processor, pulse cashews until finely ground.
Add the rest of the ingredients, and process until everything is mixed well.
Shape into 3/4″ balls.
Refrigerate for 15-20 minutes.
