These Vegan Orange Spice Muffins are super easy to make and delicious. They are hearty and healthy, and it’s hard to have just one.

This recipe was first published in 2016 (boy, where did the time go?). What I did not realize then was that it is a vegan recipe. We welcome vegan recipes on my blog, like this Golden Broccoli Soup. I decided to update the post, including pictures, and add a recipe card.

When I was little, there were very few instant cake mixes available in the store, but there was one that my mom used to buy that was so good. I have always wanted to make one from scratch, so after moving to America, I found a recipe that came close.  With a few adjustments, I could recreate the flavor I remember. Even better, this is a recipe that my whole family loves (though my son insists that I make his without raisins).

A few notes:

Flour – I don’t always have this Whole Wheat Pastry Flour on hand, so I mix 2 cups of all-purpose flour with 2 cups of whole wheat flour. The result is the same.

Orange Juice—When I plan to make this recipe, I buy a bag of oranges, and after zesting the two, I squeeze the fresh juice for the recipe; for that, I typically use about four oranges. But you can also use store-bought juice.

I especially like these Vegan Orange Spice Muffins because I get an excuse to buy some mineral water. This doesn’t seem to be a thing in America, although now there are so many different seltzer varieties that there is no need for mineral water. However, I do miss having it once in a while since it was a big thing when I was little.

Ingredients

Scale
  • 4 cups whole wheat pastry flour
  • 1 cup avocado oil
  • 1/2 tsp cloves
  • 1 tsp cinnamon
  • 1 tbsp baking soda
  • 1 tbsp water
  • 1/2 cup orange juice
  • 1/2 cup mineral water
  • 1 heaping tbsp of orange zest (about 2 oranges)
  • 1 cup + 1 tbsp sugar
  • 1/4 cup raisins
  • powdered sugar (optional)

Instructions

  1. Preheat oven to 350°F; spray the muffin tin with baking spray. I use Avocado oil spray.
  2. Sift flour and spices.
  3. Mix baking soda and water, add orange juice, mineral water, and orange zest, and mix again.
  4. Mix oil and sugar.
  5. Mix all the wet ingredients, add flour and raisins, and mix again.
  6. Spray muffin tins with cooking spray or use liners and fill evenly with batter. I get about 15 muffins from this batter.
  7. Bake for 18-22 minutes until a toothpick comes out clean.
  8. Let the muffins cool for about 30 minutes, and enjoy.
