Chile Lime Chicken Fajitas

Ingredients

  • 1 1/2 lb chicken tenders, sliced
  • 1/4 cup lime juice
  • 1 clove garlic, pressed through garlic press or chopped
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1 medium Spanish onion, sliced
  • 1 1/2 green bell pepper, sliced
  • 1 1/2 red bell pepper, sliced
  • Olive oil for cooking
  • Flour tortillas, Sour cream and salsa to serve

Instructions

  • Make lime marinade by mixing lime juice, garlic, spices and salt.
  • Marinate chicken for 15 minutes.
  • Heat about 1 tbsp. of olive oil in a non-stick pan. Cook chicken and sliced onion until chicken is no longer pink, about 7-10 minutes.
  • Add bell peppers, cook about 3-5 minutes.
  • Serve with Salsa and Sour cream.
