Homemade tomato soup. There is nothing like it. Serve it with your favorite grilled cheese sandwich or just fresh bread.

Ingredients

1 Spanish onion, chopped
1 large clove garlic, roughly chopped
3 cups vegetable broth
28-oz can whole peeled or chopped tomatoes
1 1/2 tsp sugar
1–2 Tbsp olive oil for cooking
1/4 –1/2 tsp Italian seasoning*
Salt and Pepper to taste**
Instructions
In your soup pot, heat the oil over medium heat and add onion and garlic and cook for about 5-8 minutes, until onions are soft but not browned. Add Italian seasoning and toast 5 seconds or so, just until you smell the aroma.
Add broth, tomatoes, sugar, salt and pepper to taste.
Bring it to a boil, reduce to simmer. Cook for about 20-30 minutes, until onions are soft.
Let cool briefly, puree in batches and if you’re looking for smoother texture push with a spatula through a sieve.
Reheat and enjoy!
Notes
You can add anywhere from 1/4 to 1/2 of Italian seasoning, depends on how strong do you prefer the flavor to be.
** as with all of my recipes I try not to use a lot of salt, especially here with canned tomatoes which are salty and vegetable broth. Keep that in mind when you season your soup.
