This dish combines 3 of my favorite things: coffee, superfoods, and easy recipes!
Soak the dates in coffee for about 5 minutes. (If using Medjool dates, soak for no more than 5 minutes because they are soft enough on their own. If using another kind of date, you can soak for more than 5 minutes if needed.) Drain dates before adding them to the food processor. Save the soaking liquid (coffee) in case you need to add more to the recipe.
Put almonds and dates in a food processor and pulse until it is well-mixed. (If your food processor is older or not as powerful, pulse the almonds into small crumbs before adding the dates.)
Form mixture into balls and refrigerate.
* If nut/date mixture seem to be dry you can add couple of teaspoons of coffee to it
