Russian Ice Cream

This is my favorite ice cream recipe because it is so simple and reproduces the texture and flavor I remember from the ice cream of my childhood in Russia.

I’ve never really had a great love for ice cream other than Hoffman’s as a special treat on day trips to the beach. My husband, however, would make ice cream a regular part of his daily diet if he could. This recipe is great because we both love it, to the point that we might never buy ice cream again (except, of course, from Hoffman’s the next time we go to the beach).

Ingredients

  • 2 cups heavy whipping cream
  • 1 cup sweetened condensed milk
  • 1/4 tsp vanilla extract

Method

Using a mixer, beat the heavy whipping cream on high until soft peaks form. Add vanilla and sweetened condensed milk while continuing to mix. Beat on high until medium-to-stiff peaks form. Freeze 8-10 hours. Take ice cream out of the freezer to soften before serving. Enjoy with sprinkles, chocolate shavings (as pictured) or with any topping you enjoy.

Alternate Method for Caramel Ice Cream

Use one of these methods for turning sweetened condensed milk into caramel. I usually boil it in the can (Method 1). Let the caramel cool. Follow the method above, substituting the caramel you just made for the regular sweetened condensed milk.

Alternate Method for Coffee Ice Cream

My husband and I love coffee so when I make this ice cream, I make it according to the regular recipe, then when it’s ready to go in the freezer, I divide it in half. I keep half the batch vanilla for our son, and I add 1/8 cup of brewed black coffee (cooled) to the other half to make it coffee flavored. To make the whole batch coffee, use 1/4 of a cup of coffee.

  1. I just made this for the second time, it was so good! The first time I made it with vanilla, but this time I used mint extract instead and threw in some chocolate chips. What I licked of the whisk tasted delicious haha, but I’ll let you know how it is frozen. I’ve made ice cream before with an ice cream maker, and it’s kind of a pain in the butt haha. This was a lot easier, and the consistency is really nice.
