Broccoli Cheddar Frittata

Sometimes I actually plan breakfast in advance. Like this Broccoli Cheddar Frittata. It’s amazing right out of the oven, but then what to do with the leftovers? That’s when I started making English muffin frittata sandwiches. Just reheat in the microwave in the morning and you’re good to go. One thing to mention is that for this recipe you’ll need 12″ non-stick and oven-proof skillet. I also find this recipe to be very convenient. You make one big frittata and portion it out using either a biscuit cutter or an empty jelly jar. I think it’s way easier then making individual egg muffins after which you’ll have to wash out the muffin pan (I might have ruined a muffin pan like that, or not ;). Anyway with meal prep season among us, this is one dish you’ll want to have under your belt. Trust me. It’s easy, delicious, and healthy.

Ingredients

Scale
  • 8 eggs
  • 8 egg whites
  • 1 onion sliced
  • 4 cups cooked broccoli chopped
  • 1 cup sharp cheddar
  • 2 tbsp. milk
  • Olive oil for cooking

Instructions

  • Preheat the broiler.
  • Combine the eggs and egg whites with milk in a medium bowl, whisk well.
  • In an oven proof non-stick skillet heath the olive oil over medium heat. Add onion, cook for about 3 minutes, until it begins to soften. Add broccoli and cook for another 2 minutes. Season with salt and pepper. 
  • Pour the egg mixture over the vegetables in the skillet, covering them evenly. 
  • Reduce the heat to medium low, cover and cook until the egg mixture has set around the edges of the pan but is still soft in the middle, about 6-8 minutes. Sprinkle with cheese evenly. 
  • Place the skillet under the broiler, broil until the eggs are set and are golden brown, 2-3 minutes or so. Be careful not to overcook as eggs can get tough.
  • Cut Frittata into wedges and serve. Or cool down and cut into circles and make English muffin sandwiches. Wrap in foil and refrigirate.
