In a words of my almost 11 year old “This is the best chicken I’ve ever had!” But really, this is so easy and fast and so flavorful and with so few ingredients there is no reason not to try it.

Chicken marinade ingredients:
- 1 1/2 lb. boneless skinless chicken breast cut into 1 inch pieces or so
- 2 tsp rice vinegar
- 1 Tbsp soy sauce
- Canola or vegetable oil for cooking
- Pinch of salt*
- 1/8 tsp black pepper
Sauce Ingredients:
- 6 Tbsp sugar
- 4 Tbsp rice vinegar
- 6 Tbsp water
- 1/2 tsp salt
- 1 tsp cornstarch
- 1 Tbsp canola or vegetable oil
Instructions
- Place the chicken in the bowl and add rice vinegar, soy sauce and pinch of salt if using. Mix well, marinade for 10 minutes.
- Cook the chicken in the skillet until no longer pink in the center about 10 minutes or so. Remove from the skillet.
- Heat a sauce pan add 1 tbsp of oil, add the rest of sauce ingredients, mix well, heat until boiling. Pour over the chicken and serve.
Notes
- Using soy sauce adds some salt to the recipe, use your salt wisely
