Cinnamon Maple Chex Mix

This makes a great party mix for your Fall get-togethers or trail mix for sustaining energy during hikes, sports, and other Fall activities.

My son’s go-to snack is pretzels. He’ll eat them any time, any where. This recipe began as a an attempt to bring some diversity to the snacks I was sending him to school with everyday, but the result was a snack that my husband and I can’t get enough of. Seriously though, if I don’t portion out individual servings, one of us will end up having to take the bag away from the other to keep them from eating it all. It’s also really easy to tailor to your specific tastes. If I’m making it just for my son, I’ll leave out the wheat chex and pumpkin seeds, since he says he doesn’t like them. For myself, I substitute more seeds for less peanuts, and vice versa for my husband. Simple ingredients, little prep time, and incredible Fall flavors. You can’t hope for much more than that from your back-to-school snacks.

Ingredients

  • 7 cups assorted Chex (honey, wheat, and rice)
  • 1 cup pretzels
  • 1 cup roasted pumpkin seeds
  • 1 cup roasted peanuts
  • 1 cup semi-sweet chocolate chunks
  • 1 cup cinnamon chips
  • 4 tbsp butter
  • 1/4 cup maple syrup
  • 1 1/2 tsp cinnamon



Method

  1. In a large, microwavable bowl, mix Chex, pretzels, pumpkin seeds, and peanuts.
  2. In a microwavable measuring cup, add butter, syrup, and cinnamon. Microwave on high for 1 minute, then mix well.
  3. Pour sauce over Chex mix and stir until everything is coated.
  4. Microwave on high for 3 minutes, stopping after every minute to mix.
  5. Spread on wax paper or a cookie sheet covered with aluminum foil and let cool.
  6. Once cool, add chocolate chunks and cinnamon chips (if you add them too soon, they’ll melt).

Store in an airtight container or portion out into individual servings and store in snack-sized zipper bags.
