I was looking through my Russian recipes and came across a recipe for strawberries Romanoff, which inspired this Berries Romanoff Style recipe. The original recipe calls for just strawberries and alcohol to soak them in, but I substituted lemon juice for alcohol. That way the whole family can enjoy it. I also added blueberries because it’s berry season right now, and I wanted to include more then just strawberries. The end result was amazing. These Berries Romanoff are perfect for a hot day, and they look elegant. It’s one of those desserts you’ll just never want to end.

Ingredients

Scale
  • 32 oz. ripe strawberries*
  • 1 pint blueberries
  • 34 tbsp lemon juice
  • 1 1/4 cups vanilla ice cream, softened

Instructions

  • Wash, dry, and quarter the strawberries. Wash and dry blueberries.
  • Add berries and lemon juice to a bowl and mix.
  • Mix ice cream and whipped cream together.
  • Portion out berries and top with cream mixture.
  • You can also freeze the cream mixture first if you want a frozen treat, or if the dessert might sit for a few minutes before being served or eaten.

Notes

This dessert cannot be made ahead apart from if you decide to freeze whipped cream/ice cream mixture.
