Red, White, & Blueberries

This simple, no-bake dessert is patriotically delicious!

I was looking through my Russian recipes and came across a recipe for strawberries Romanoff. It looked delicious, but I was disappointed that the strawberries had to be soaked in alcohol and a ton of sugar. I couldn’t understand why anyone would want to take already sweet strawberries and add more sugar to them, or why they would want to damage the flavor by adding alcohol. So I decided to alter the recipe to suit my taste, and it came out great. Since the 4th of July is right around the corner, I also decided to add blueberries to make it colorfully appropriate for the season (I was even able to find locally-grown Jersey Fresh blueberries on sale!).

Ingredients

  • 32 oz. ripe strawberries*
  • 1 pint blueberries
  • 3-4 tbsp lemon juice
  • 1 1/4 cups vanilla ice cream, softened
  • 1 1/2 cups whipped cream (store bought or homemade)

*The riper the strawberries are, the sweeter they are. If your strawberries aren’t ripe enough, you can add 1 tbsp sugar for sweetness.

Method

Wash, dry, and quarter the strawberries. Wash and dry blueberries.

Add berries and lemon juice to a bowl and mix.

Mix ice cream and whipped cream together.

Portion out berries and top with cream mixture.

You can also freeze the cream mixture first if you want a frozen treat, or if the dessert might sit for a few minutes before being served or eaten.
