Protein Pancakes

These pancakes are a delicious and healthy way to start your day.

I first tried this recipe after my friend, Kristi, shared it on her blog (Keeping Up with Kristi) a while ago, and it quickly became a family favorite. Even my son, a notoriously picky-eater, loves this recipe. It’s loaded with protein and fiber, and as long as you don’t go crazy with the syrup, it’s pretty much a guilt-free breakfast (or brinner). Give it a try, and check out her blog.

Ingredients

  • 16 oz. cottage cheese
  • 2 cups old fashioned oats
  • 4 eggs
  • 8 egg whites
  • 2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • Maple syrup for serving
  • Fresh berries, bananas, or chocolate chips for serving (optional)

Method

In a food processor or blender, combine all of the ingredients. Pulse until well-mixed.

Preheat griddle and coat with non-stick spray. Using 1/4 cup of batter per pancake, cook pancakes until bubbles start to appear, then flip and cook for a few more minutes, checking regularly to make sure they don’t burn.

Serve with your favorite toppings.

Приятного аппетита! (Priyatnova appetita! Russian for ‘Bon Appetit!’)
