This is a simple recipe that’s great for when you need a pick me up.
One of the superfoods I’ve been experimenting with is matcha, a powder made from green tea. It’s normally used to make tea or dissolved in other liquids, but I’ve been including it in snack recipes. It’s refreshing and great for when you’re feeling worn out and need a pick me up. It does have a little caffeine in it though so keep that in mind. These are great for a mid-morning or mid-afternoon snack, but you probably don’t want to have them right before bed.
- 3 cups raw cashews
- 1 tbsp coconut oil, melted
- 3 tbsp maple syrup
- 3 tsp matcha powder
- 1 1/2 tbsp lime juice (from about 1 1/2 limes)
- Zest of a whole lime
Roast cashews at 350°F for 9 minutes. Let cool. Melt coconut oil.
In a food processor, pulse cashews until finely ground.
Add the rest of the ingredients, and pulse until mixed well.
Spread mixture evenly in an 8″x8″ dish.
Refrigerate for about 20-30 minutes. Cut and serve.
