Cardamom Lime Nut Bars

These will fill you up and energize you without all the additives found in store-bought snack bars.

If you’ve been following my recipes, you know that I’ve been trying to make my own healthy snack bars and bites so I can cut out all the preservatives and additives that you find even in healthy store-bought snacks. I’ve also been experimenting with cardamom lately. I believe it’s an underused and underappreciated ingredient, especially given all its health benefits. If nothing else, I hope I can inspire some of you to start experimenting with it and using yourselves.

Ingredients for Base

  • 2 cups raw cashews
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp lime juice
  • Zest of 1/2 of a lime

Ingredients for Top Layer

  • 2 cups dried apricots
  • 2 tbsp coconut oil, melted
  • 1 tbsp maple syrup
  • 1/2 tsp cardamom
  • 1 tbsp lime juice
  • Zest of 1/2 lime

Method

Roast cashews at 350°F for 9 minutes. Let cool. Melt coconut oil.

In a food processor, pulse cashews until finely ground. Add the rest of the ingredients for the base and process until mixed well.

Evenly spread mixture in an 8″x8″ glass dish and pat down until smooth. Refrigerate while you make the top layer.

Chop and soak the apricots in warm water for about 5 minutes. Drain.

In a food processor, pulse apricots until finely chopped. Add the rest of the ingredients and process until mixed well.

Take nut mixture out of the refrigerator and evenly spread the apricot mixture on top.

Refrigerate for about 30 minutes.

Cut into bars. Serve chilled.
