These Acai Almond No-Bake Brownies are so easy to make and so delicious! They are full of natural super foods rather than artificial sweeteners and flavors, but it’s still so sweet and chocolatey–all without baking or spending tons of time in the kitchen. My picky-eater loves them as an after school snack, while I enjoy them for breakfast with my coffee. And I don’t have to feel guilty about indulging or worry about what’s going into his body.

Ingredients

Scale
  • 2 cups raw almonds (if you buy roasted almonds, make sure they are unsalted)
  • 1 cup Medjool dates, halved (you can use regular dates, but I think Medjool dates work best)
  • 4 tbsp. cocoa powder
  • 2 tbsp. maple syrup
  • 2 tbsp. coconut oil, melted
  • 1/2 tsp vanilla extract
  • 2 tbsp. acai powder (if you don’t have acai powder or don’t want the berry flavor, you can leave this out, and the recipe will still taste great)

Instructions

  • Roast almonds on a cookie sheet at 350°F for 9 minutes.
  • Cut dates in half, soak in warm water for about 5 minutes, then drain.
  • In a food processor, pulse roasted almonds until finely ground.
  • Add the rest of ingredients and process until smooth.
  • Spread evenly in an 8″x8″ glass dish or container.

Refrigerate for 20-30 minutes.
