Raw Falafel

This is a great “raw foods” alternative that is healthy, filling, and delicious.

I’m somewhat of a novice when it comes to raw food. It took me a while to finally give in and give it a try, but this recipe was my first attempt at a raw recipe, and it turned out so good, that I’ve been won over. Not only do you get all the nutrients from raw vegetables, but it tastes absolutely delicious. I especially liked this recipe served on kale with lemon juice and olive oil. Not only does it taste great, but you’re able to take advantage of all the health benefits of kale as well.

Yield: 10-12 patties, depending on the size

Ingredients

  • 1 cup raw almonds, soaked and ground (I use the ground almonds that are leftover from my homemade almond milk)
  • 1 cup raw sunflower seeds
  • 1/4 cup parsley
  • 2 cloves garlic
  • 1/4 of a Spanish onion
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt to taste
  • Kale, tomatoes, olive oil, and lemon wedge for serving



Method

If you don’t have almonds leftover from making homemade almond milk, soak almonds overnight in a bowl of water with a pinch of salt, drain, then grind in a food processor.

In a food processor, combine onion, garlic, and parsley, pulsing until finely chopped.

Add almonds, sunflower seeds, salt, and spices, and pulse until everything is mixed well, pausing occasionally to scrape the sides down.

Form into patties. At this point, it’s ready to eat, but I liked mine dehydrated a little. To dehydrate them, place them on a baking sheet lined with foil and bake at 200°F for 30 minutes.

Serve on a bed of chopped or sliced kale mixed with lemon juice and olive oil or with either of the sauces from my healthy falafel recipe.
