Cardamom Maple Almond Granola

This granola is a nutritious and delicious way to start your day!

In Russia, cardamom is commonly used in pastries, but lately, I’ve been trying to create a healthier recipe to feature it because of its amazing benefits: cardamom has been used as a natural remedy for digestion problems (including heartburn, constipation, and gas) and cold and flu symptoms, and it’s full of beneficial vitamins and minerals (including calcium, vitamin C, iron, and magnesium). And since I was also looking for an alternative for cinnamon (which I frequently use in granola, pancakes, waffles, etc.), this granola was the result. It’s full of flavor and great for breakfast, as a snack, or as a topping on yogurt or a smoothie bowl (see picture at end).

Ingredients

  • 4 cups old fashioned rolled oats (to make this recipe gluten-free, make sure your oats are gluten-free)
  • 1 2/3 cups sliced almonds
  • 3/4 tsp sea salt
  • 1 tsp ground cardamom
  • 1/2 cup maple syrup
  • 1 cup dried apricots, diced

Method

Preheat oven to 350°F and line a baking sheet with parchment paper.

In a large mixing bowl, combine oats, nuts, salt, and cardamom. Stir until everything is mixed well.

Add maple syrup, mixing until all the oats and nuts are covered.

Turn the granola out on your prepared baking sheet and spread evenly.

Bake for 15-20 minutes, until it turns golden, stirring halfway through. The granola will crisp as it cools. Once granola is cooled, add diced apricots and mix well.

Store in an airtight container at room temperature (it should stay fresh for 1-2 weeks).
