Salmon Cakes

This is one of my family’s favorite seafood recipes, and it’s as easy as it is delicious.

I really enjoy a good fish recipe, and this is one of my favorites for a number of reasons. First, my husband and I both love it. I tailored it to include a mix of flavors that I love, and since it’s basically a crab cake with salmon instead of crab, it’s also a favorite of my husband, who loves salmon and crab cakes. Secondly, if you precook everything beforehand (or buy precooked salmon), the recipe is actually really quick and easy (plus, the flavors combine better if you cook and mix everything in advance and let it sit in the fridge overnight). Then all you have to do is form the patties and brown them in a pan.

(Note: I recommend buying fresh salmon and cooking it yourself, but I have used precooked salmon in a pinch so if you do that, just skip the first step about baking the salmon. I also recommend buying wild salmon. It tastes so much better than farmed salmon.)

Salmon Cake Ingredients

  • 2 lbs salmon
  • 1/2 cup onion, diced
  • 1/3 cup celery, diced
  • 1/3 cup bell pepper, diced
  • 2 tbsp dill, chopped
  • 1 egg
  • 1 egg white
  • 1 cup fresh bread crumbs
  • 1 tbsp low sodium Old Bay Seasoning
  • Olive oil for cooking

Dill Sauce Ingredients

  • 1/2 cup sour cream
  • 2 tsp dill, chopped
  • 1 clove garlic
  • Sea salt to taste

Method

Preheat oven to 450°. Place salmon on a baking sheet covered with foil and nonstick spray (not only will this keep the salmon from sticking, but you won’t have to wash the baking sheet either). Bake until just about done. The time needed will depend on the size of the salmon. A whole fillet can take 12-15 minutes, while small portions usually take about 5-7 minutes. Don’t overcook it though. Let salmon cool so it’s easier to handle, then break the meat into flakes.

Dice onion, celery, and bell pepper, and cook in olive oil until soft (about 5-7 minutes). Add dill and Old Bay Seasoning.

Mix flaked salmon, vegetables, egg, egg white, and bread crumbs.

Shape into patties or little cakes. Cook patties on both sides in a nonstick pan with about 1 tbsp of olive oil until browned.

To make sauce, mix everything and add salt to taste. Chill until ready to serve. And it tastes great with a mixture of greens as a side dish too.
