Like my almond coffee bites, I came up with this recipe as a way to combine great flavor, healthy ingredients, and an easy recipe into a fantastic substitute for less healthy options. In this case, I wanted the flavors of a cranberry orange muffin without all the sugar and carbs that come with eating a muffin. I enjoy these bites with my coffee for breakfast or as a mid-afternoon snack, and not only are all the ingredients simple and real, but macadamia nuts have been linked to all kinds of health benefits. Yield: About 20 bites
Ingredients
- 2 cups macadamia nuts, roasted
- 1 cup dried cranberries
- 1/2 cup fresh orange juice
- zest from 1 orange
Method
Soak cranberries in orange juice for about 5 minutes. Drain.
Place cranberries, macadamia nuts, and orange zest in a food processor and pulse until mixed.
Form into bite-sized balls and refrigerate.
