Almond Coffee Bites

These Almond Coffee bites only have 3 ingredients and one of them is coffee. Have I mentioned that I love coffee? Well, I do! I also love almonds and dates so I combined all three in this recipe is a great combination of simple, uncomplicated flavors. Not only is it an easy recipe, but it’s healthy as well. Almonds are a superfood, and coffee and dates have both been linked to numerous health benefits. And the sweetness of the dates means that you don’t have to add any sugar or artificial sweeteners. These bites are meant to be a snack to give you a mid-morning or mid-afternoon energy boost, but I enjoy eating them for breakfast with a cup of coffee too.

Almond Coffee Bites

Ingredients

Scale
  • 2 cups almonds
  • 1 cup dates (preferably Medjool dates)
  • 6 oz brewed coffee, black

Instructions

  • Soak the dates in coffee for about 5 minutes. (If using Medjool dates, soak for no more than 5 minutes because they are soft enough on their own. If using another kind of date, you can soak for more than 5 minutes if needed.) Drain dates before adding them to the food processor. Save the soaking liquid (coffee) in case you need to add more to the recipe.

  • Put almonds and dates in a food processor and pulse until it is well-mixed. (If your food processor is older or not as powerful, pulse the almonds into small crumbs before adding the dates.)

  • Form mixture into balls and refrigerate.

Notes

* If nut/date mixture seem to be dry you can add couple of teaspoons of coffee to it
