I came up with this recipe to recreate one of my favorite takeout meals without any of the takeout guilt.

We have a great burger place by us that makes a Turkey Tex Mex Burger that I really enjoy with sweet potato fries. I wanted to find a way to recreate the flavor without the guilt of eating at a burger joint on a regular basis. So I came up with this deconstructed salad bowl that includes the best part of the burger for me–the flavor–with the added bonus of being nothing but healthy veggies. If you like Tex-Mex, salads, or both, I think you’ll enjoy this dish as much as I do!

Salad Ingredients

  • 3 sweet onions
  • 1 sweet potato
  • 1 cup black beans (I recommend using my chipotle black beans recipe as an alternative to canned beans)
  • 1 cup of canned corn (or 2 ears of corn)
  • 1 avocado
  • 2 medium (or 1 large) tomatoes
  • 1 cup shredded provolone
  • 1/4 – 1/2 cups pickled jalapeño peppers (depending on your heat tolerance)
  • Salt and pepper

Dressing Ingredients

  • 16 oz sour cream
  • 1/2 cup caramelized onions (taken from onions in salad ingredients)
  • 2 tsp sauce from chipotle peppers in adobo sauce (If you use my chipotle black beans recipe then you’ll already have an open can of chipotle peppers in adobo sauce. Just take 2 tsp of sauce from that can.)
  • 1/4 cup cilantro
  • 1/2 tsp chopped garlic
  • 1/4 tsp salt



Preparing the Salad

Preheat the oven to 450°F. Slice and cook the onions in olive oil on a slow flame for about 20 minutes. Salt and pepper to taste. Set 1/2 cup aside for dressing.

Chop the potatoes, season with salt, pepper, and olive oil. Bake at 450°F for 20-25 minutes. Let cool.

If you are using fresh corn, boil the 2 ears of corn for 3-5 minutes. Let cool. Cut 1 cup worth of corn off the cob. Chop avocado and tomatoes. Shred provolone.

You can mix all the ingredients (don’t forget the corn and beans) in one large bowl and add 2-3 tbsp of dressing (see directions below) or leave the ingredients separated as a salad bar from which everyone can serve themselves.

Preparing the Dressing

Place all ingredients in a food processor. Pulse until smooth.
