Keep It Simple Salsa

This is a simple recipe for salsa that you can quickly whip up whenever you need it. I especially like to use it during the summer when all the veggies are fresh and in season. You can accommodate your heat tolerance just by adjusting the amount of jalapeño. If you like fresh veggies more than spicy heat, only use 1/2 of a jalapeño. If you like to clear out your sinuses, use several.

Ingredients

  • 8 medium tomatoes, diced
  • 1 jalapeño (adjust for your heat tolerance)
  • 1/3 cup finely chopped red onion
  • 1/3 cup finely chopped cilantro (you can also substitute parsley if you’re not a fan of cilantro)
  • Salt and pepper to taste

Method

Cut tomatoes in half and squeeze some of the juice out so the salsa is not too liquidy. Dice tomatoes. Chop jalapeño, onion, and cilantro. Mix everything in a bowl. Add salt and pepper to taste.
