I found this recipe for Garlic-Dill Cucumber Spears a while back. I’m not even sure where at this point. And it quickly became a staple of my summer cooking because of how easy it is. When I was growing up, my mom had a little wooden barrel where she would make quick pickles. They were out of this world. This recipe actually does a good job of reproducing that flavor. You essentially get the taste of pickles (without having to go through the pickling process) and the crispness of fresh cucumbers.

Ingredients
- 6–7 mini cucumbers
- 2 tsp salt
- 2 garlic cloves
- 1/4 cup chopped dill
Instructions

Slice the cucumbers lengthwise twice and put them in a container.

Pour the salt on the garlic and mince the garlic. Press the knife blade down on the garlic/salt combination. Continue alternating chopping and pressing for about 5 minutes or until the garlic/salt combination becomes a paste.

Put the paste into the container with the cucumbers.

Chop the dill and add to the cucumbers and garlic paste.

Cover the container tightly and shake for about 3-5 minutes. Serve them immediately or chill them in the refrigerator first.
